Broccoli Cheddar Muffins

Prep Time: 10 minutes - Cook time: 25 minutes - Total time: 35 minutes

Servings: 12 muffins


2 ½ cups broccoli florets chopped

2 cloves garlic finely minced

2 eggs

¼ cup almond flour

1 1/2 cups cheddar cheese, shredded

Salt & pepper to taste

  1. Cut the crowns away from the large stems of the broccoli.

  2. Bring a pot of water to a boil and steam the broccoli for 5 minutes.

  3. Once cooled, remove and chop into tiny pieces.

  4. Add remaining ingredients into the bowl and combine into evenly mixed.

  5. Spray a baking dish with cooking oil and scoop in evenly distributed mixture into each cupcake hole. Press down on each mixture.

  6. Bake at 375F for 20 minutes
