Burrito Omelette

Ingredients:

2 eggs, whisked

1 tsp Healthy U Mexico Spice

Alternative to Healthy U Mexico Spice

1 tsp garlic powder

1⁄2 tsp crushed red pepper flakes

1⁄2 tsp dried oregano

2 tsp paprika

1 tsp ground cumin

1⁄2 tsp salt & black pepper

1⁄2 ground cinnamon

1⁄2 ground cloves

2-3 tbsp shredded cheese

2 tbsp black beans

1/4 avocado, sliced

1/4 tomato, sliced



Instructions:
  1. Heat oil in a pan and pour the whisked egg on. Add spice. You want a really thin layer. Place a lid on top and all the eggs to cook. You can poke the egg with a paring knife to check if it is cooked inside.

  2. Add in 1 tbsp of the cheese in the center of the egg. Top with beans, avocado and tomato slices. Then fold one end into the middle. Add another 1 tbsp of cheese.

  3. Fold the middle to the edge. (Think of it as rolling the omelette twice from left to right). Top with the remaining cheese.

  4. Serve and enjoy!
