Cheesy Chicken Harvest

Prep time: 20 minutes - Cook time: 20-25 minutes - Total time: 40-45 minutes

  • Chopped vegetables (mushrooms, bell peppers, red onion, carrots, garlic cloves, broccoli and tomatoes)

  • ¼ cup EVOO

  • 3-4 tbsp Healthy U Italian spice mix (or any other premix version)

  • 1 rotisserie chicken, shredded

  • ¾ cup fresh basil leaves

  • 1 cup grated cheese, anything goes!

  1. Layer all ingredients in a lined baking dish and bake at 400F (on the lower rack to prevent cheese from burning) for 20 to 25 minutes.
