2 cups finely chopped brussel sprouts
1/2 cup finely chopped walnuts
Juice from 1/2 lemon
2 tbsp oil
1 tsp salt
2 tbsp parmesan cheese
2-3 boneless skinless chicken breasts, butterflied and pounded
In a frying pan over medium heat, add brussel sprouts, walnuts, lemon juice, oil, salt, and parmesan. Cook until crispy but not burnt.
Lay out each piece of chicken and add 1 slice of provolone cheese in the middle and a scoop of the brussel sprout mixture and roll-up.
Add the remainder of the brussel sprout mixture on top and bake at 400F for 30-35 min
