Chicken Nuggets & Crispy Bean Fries

These chicken nuggets are packed with fiber, nutrients and have a crispy finish! Served with a side if juicy, crispy green beans. What's not to love about this healthy twist recipe edition?




Ingredients List:
  • 3 chicken breasts, cubed

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 pkg frozen cauliflower rice

  • ½ cup cannellini beans white beans

  • 1 cup almond flour

  • 1/2 cup coconut flour

  • 3/4 cup parmesan cheese

  • 2 tbsp Healthy U Onion Overload

Alternative to Healthy U Onion Overload

2 tsp minced onion

2 tsp granulated onion

2 tsp onion powder

1 tsp salt

1 tsp chives

  • 3-4 eggs beaten

  • 1-2 pkg fresh green beans




Instructions:

Crispy Green Beans:

  1. Preheat oven to 400 F

  2. Wash green beans and chop off the ends.

  3. Using a utensil, dip each nugget into the egg wash. Let excess egg wash dip off before dipping into flour. (This will help to avoid using too much egg).

  4. Dip the egg-y nugget into the flour to finish coating it. Set aside on a baking tray with a drying rack set on top. (The drying rack will help make sure the nuggets achieve 360 crispiness).

  5. Repeat step 2 & 3 for the rest of the beans.

  6. Bake at 400 F until you achieve a golden brown crisp! (The beans should achieve a crispy exterior with a juicy interior).

  7. Spray final products before adding to oven for extra crispiness!

Chicken Nuggets:

  1. Cook chicken prior to blending.

  2. Caramelized onions & garlic prior to blending.

  3. Mix chicken, onions & garlic together in a large bowl.

  4. Add chicken, onions & garlic mix into blender. Blend until smooth consistency. If needed, add 1-2 tbsp water to blender if needed. (Add water in small amounts to avoid creating gloop!)

  5. Roll batter into a nugget shape and set aside. Repeat until all batter is used.

  6. Using a utensil, dip each nugget into the egg wash. Let excess egg wash dip off before dipping into flour. (This will help to avoid using too much egg).

  7. Dip the egg-y nugget into the flour to finish coating it. Set aside on a baking tray with a drying rack set on top. (The drying rack will help make sure the nuggets achieve 360 crispiness).

  8. Repeat step 6 & 7 for the rest of the nuggets.

  9. Bake at 400 F until you achieve a golden brown crisp!

  10. Spray final products before adding to oven for extra crispiness!
