Healthy U Dill Salmon Sheet Pan

Ingredients

Oil (approx. 2 tbsp for pan and 1 tbsp for vegetables)

Lemon or lime, sliced (approx. 3 lemons or limes)

4 salmon filets

2 onions, thinly sliced

1 orange bell pepper, thinly sliced

1 bunch asparagus, roughly chopped

Healthy U Onion Overload Spice (approx. 1 tbsp - measure with your heart!)*


*Spice Alternative:

- 2 tsp minced onion

- 2 tsp granulated onion

- 2 tsp onion powder

- 1 tsp salt

- 1 tsp chives


Dill Sauce

½ cup fresh dill

3 tbsp oil

2 tbsp honey

2 garlic cloves

Juice from 1 lemon

½ tsp salt




Directions
  1. Add oil and sliced lemon or limes to a lined tray, separated into four lines (see video for details!)

  2. Lay salmon filets on top of the oil and lemons/limes.

  3. Toss vegetables (onions, orange bell pepper, asparagus) in oil and Healthy U Onion Overload spice (or alternative spice mix). Place around salmon filets.

  4. In a blender, mix all sauce ingredients. Drizzle over salmon filets.

  5. Bake at 400ºF for 18-22 minutes.
