Prep Time: 30 min- Cook time: 4 hr 30 min - Total time: 5 hr
2-4 lb Top Sirloin roast
3 tbsp Coconut flour (1 tbsp to spread on roast, the other 2 for the onion mixture)
3-4 Carrots, chopped
1 Onion, chopped
1 cup Brussel Sprouts, chopped
3-4 Garlic cloves, minced
2 tbsp Tomato paste
2 cups Broth
1 tsp Salt
Low-medium pan, add oil and pan fry the roast on both sides for 4-5 minutes. Coat both sides with 1 tbsp of Coconut flour and salt.
Add chopped carrots to your pot and add cooked roast on the top.
In the same frying pan you had the roast in, add the onions, brussel sprouts, garlic, tomato paste, remaining coconut flour, broth and salt.
Once tender and soft, add vegetable mixture on top of the roast.
Cook at 325 F for 3-4 hours.
