The Jennifer Aniston Salad

1 cup freekeh, cooked

2-3 mini cucumbers, chopped

1/2 cup parsley, chopped

1/2 cup mint, chopped

1/3 cup red onion, chopped

1/2 cup pistachios, chopped

2 cups chickpeas

1/4 cup of rice vinegar (or fresh lemon juice)

1/4 cup extra virgin olive oil

Salt & pepper

1/2 cup crumbled feta


1. Mix and toss all ingredients together in a large bowl and serve!
