Asian Glazed Meatballs & Inside Out Spring Rolls

Makes: 18 meatballs

Asian styled meatballs with spring rolls! Only... these ones are INSIDE OUT! How cool is that? This recipe is loaded with protein and lots of vegetables adding to the colourful nature of this dish!



Ingredients List:

Meatballs:

  • 2 lbs ground chicken or turkey

  • 1 small onion, minced

  • ½ cup almond flour

  • 1 large egg

  • 1 tbsp Healthy U Onion Overload

Alternative to Healthy U Onion Overload

2 tsp minced onion

2 tsp granulated onion

2 tsp onion powder

1 tsp salt

1 tsp chives


Glaze:

  • ½ cup low sodium soy sauce

  • 1 tbsp seasoned rice vinegar (if you do not have seasoned rice vinegar you can add a little bit of maple syrup or honey to sweeten it up)

  • 1 1/2 tbsp honey

  • 4 garlic cloves, minced

  • 1 tsp ginger grated

  • 2 tbsp white sesame seeds

  • 8 tbsp water

  • 2 tsp cornstarch

  • 1 tbsp sesame oil

Inside Out Spring rolls:


Filling

  • 2 lbs ground chicken or turkey

  • 1 small onion, minced

  • ½ cup almond flour

  • 1 large egg

  • 1 tbsp Healthy U Onion Overload (Homemade version: Onion powder & some salt)

  • ½ white cabbage, shredded (or a bag of raw coleslaw)

  • 4 zucchinis, spiralized

  • 2 carrots, grated (or pre-shredded carrots or baby carrots)

  • ½ bunch green onions, chopped

Sauce

  • ½ cup low sodium soy sauce

  • 1 tbsp sesame oil

  • 4 garlic cloves, minced

  • 1 tsp ginger grated

Peanut dipping sauce:

  • ¼ cup creamy peanut butter

  • ¼ cup coconut milk (from carton)

  • 1 ½ tbsp soy sauce

  • 1 ½ tbsp chili garlic sauce

  • Juice from ½ lime

  • 1 tsp honey or maple syrup

Instructions:

Asian Glazed Meatballs:

  1. Preheat oven to 375 F.

  2. Add the chicken, garlic, almond flour, eggs and seasoning into a large bowl, and combine.

  3. Use your hands to form meatballs with the meat mixture. (If the mixture is too loose/sticky, you can add some extra almond flour to provide more structure).

  4. Place on a parchment-lined baking sheet.

  5. Bake for 20 minutes and until chicken is fully cooked.

Glaze:

  1. Add the soy sauce, rice vinegar, sweetener, garlic and ginger into a skillet at low heat.

  2. In a small bowl, combine cornstarch with water.

  3. Add the cornstarch mix to the cooking soy sauce mix.

  4. Let it simmer for around 7-8 minutes and until it reaches a thickened consistency.

  5. Pour the glaze over top meatballs when serving!

Inside Out Spring Rolls:

  1. Add the chicken, garlic, almond flour, eggs and seasoning into a large bowl, and combine.

  2. In a large skillet, add the chicken. Use a spatula or large spoon to spread around evenly.

  3. Allow the chicken to cook until evenly cooked. Periodically stir to avoid getting giant chicken clumps.

  4. While the chicken is cooking, add all the ingredients for the peanut dipping sauce and combine.

  5. Once the chicken is fully cooked, add in the cabbage. You can add the cabbage in parts to avoid overspill. (Any leftover cabbage can be used in salads, stews and more!)

  6. Add in the carrots next. Stir in with the chicken and sauce.

  7. Once the vegetables are softened and nearly cooked, pour in the sauce and stir it in.

  8. Cook for a few minutes more before removing from heat.

  9. Sprinkle the green onions on top and drizzle with peanut butter sauce.
