Beef Borsht (Slow Cooker)

Prep time: 30 minutes - Cook time: 5-6 hours - Total time: 6.5 hours



Ingredients
  • 1 tbsp olive oil

  • 1 lb stewing beef

  • 1 onion, chopped

  • 3 carrots, chopped

  • 3 celery stalks, chopped

  • 4 beets, cubed

  • ½ tsp cumin

  • ½ tsp coriander

  • 4 cups vegetable broth

  • 4 cups of water

  • 1 cup tomato sauce

  • 4 cups cabbage, shredded

  • ¼ cup dill, chopped

  • Salt and ground black pepper to taste


Directions
  1. Add all ingredients to a slow cooker.

  2. Cook on HIGH for 5-6 hours.

  3. Enjoy with a dollop of greek yogurt and dill.
