Chicken BLT Salad

Prep time: 15-20 minutes - Cook time: 15 minutes - Total time: 30-45 minutes

Servings: 3-4


1 head romaine lettuce, chopped

2 cups Spring Mix lettuce

3 chicken breast, cubed (air-fry 400F x 15 minutes with plain Greek yogurt & blackened seasoning mix)

¾ cup cherry tomatoes, halved

¼ cup sharp cheddar cheese, grated

4 slices turkey bacon, chopped (cook in oven 400F x 12 minutes on parchment paper, flip ½ way through)

Green Goddess Dressing:

1 cup cilantro leaves

3 tbsp extra virgin olive oil

1-2 garlic cloves

½ tsp salt

⅔ cup plain Greek yogurt

Juice from 1 lime

1 small avocado or 1/2 large avocado

  1. Air-fry chicken breast with greek yogurt and spice mix marinade at 400F for 15 minutes. Meanwhile, cook the turkey bake in the oven at 400F for 12 minutes.

  2. Chop up romaine lettuce and add to the spring mix. Next, add sliced cherry tomatoes and grated sharp cheddar cheese.

  3. Cut up crispy turkey bacon and cooked chicken breast and add to salad.

  4. Blend up the Green Goddess dressing, add to the salad and mix everything together. Enjoy!
