Pumpkin Apple Carrot Soup

Ingredients:

2 cups 100% pumpkin puree

2 small apples, chopped

3 carrots, grated and chopped

1 white onion, chopped

¼ cup oil

2 tbsp Healthy U Cozy Soup Mix

Alternative to Healthy U Cozy Soup Mix

1 tsp salt & black pepper

1 tsp garlic powder

1⁄2 tsp celery seed

1⁄2 tsp turmeric powder

1 tsp dried parsley

1 tsp dried sage

1 tsp dried thyme

1 tsp marjoram

4 cups water + 2 tsp salt (instead of broth)



Instructions:
  1. On medium heat, cook apple, carrots, onion, oil & seasoning

  2. Once cooked, add pumpkin, water & salt. Cook for 15-20 minutes, until soft.

  3. Puree mixture

  4. Serve with 1 dollop of plain Greek yogurt, and 1 tsp pumpkin seeds
