Rainbow Shrimp Slaw

Prep time: 15 min - Cook time: 3 min - Total time: 18 min



1 pkg shrimp

Juice from 1/2 lemon

1 tbsp oil

1/4 tsp salt

3 garlic cloves, minced

1 head of red cabbage


1 head cilantro

Juice from 1/2 lemon

3 tbsp oil

2 garlic cloves

1/4 tsp salt

  1. In a frying pan, add the shrimp along with oil, salt, garlic, and lemon. Fry for 2-3 minutes, until the shrimp is pink.

  2. Thinly slice the red cabbage.

  3. In a blender, add all dressing ingredients and blend until smooth

  4. Add the cooked shrimp on top of red cabbage and drizzle on the dressing. Mix and serve.
