Prep time: 30 minutes - Cook time: 5 minutes - Total time: 35 minutes
3-4 chicken breasts, baked at 400°F for 20 minutes with EVOO, salt and pepper
8-12 Roma tomatoes, diced
3 garlic cloves, minced
2-3 tbsp EVOO
2 tbsp fresh basil, finely chopped
¼ tsp salt
1 package bocconcini cheese (approx. 1 cup / 8 ounces)
½ cup freshly grated parmesan cheese
In a large bowl, combine Roma tomatoes, garlic, basil, EVOO and salt, and mix to combine.
Cut chicken breast into bite-sized pieces and add it, along with the bocconcini and parmesan cheese, to the tomato mixture. Mix well, and enjoy!
