1 eggplant

1 clove Garlic

3 tbsp Oil

1 tsp Salt

2 tbsp Healthy U Za’atar Spice

Alternative to Healthy U Za'atar Spice

2 tbsp dried oregano

1 tbsp sumac

1 tbsp sesame seeds

1 tsp dried marjoram

1 tsp dried thyme

1 tsp salt

  1. Cut lines into eggplant to help cook it through evenly, and add garlic cloves to hold open wedges while baking. Add garlic and salt

  2. Bake at 425F for 45 minutes or until completely soft, then cut into chunks

  3. Add tahini to make a creamy dip

  4. Top it off with Healthy U Za’atar Spice
