Blueberry Skillet Cake

Ingredients
  • 4 eggs

  • ½ cup milk, any type

  • ½ cup almond flour

  • 2 tbsp coconut flour

  • ¼ cup maple syrup

  • 1 tsp vanilla

  • Zest from 1 lemon

  • 1 cup blueberries

  • 1 tbsp coconut oil

Directions
  1. In a large bowl, combine all ingredients (excluding blueberries and coconut oil).

  2. Melt coconut oil and use it to coat a cast-iron skillet.

  3. Add fresh blueberries to the skillet, followed by the cake batter.

  4. Bake for 15 minutes at 450F and enjoy!
