Prep time: 20 minutes - Cook time: 18-20 minutes - Total time: 40-48 minutes
1 1/2 cup almond flour
1/4 cup coconut flour (you can add little more to maintain height of scones)
1 tbsp baking powder
3/4 cup Greek yogurt
1 tbsp vanilla extract
3-4 tbsp maple syrup or honey
¾ cup Skor pieces (butter toffee pieces)
Combine almond flour, coconut flour, baking powder, Greek yogurt, vanilla extract, maple syrup, and Skor pieces to form a dough.
Roll dough into two small balls, lightly flatten and cut into triangles.
