Cheesy Mexican Skillet

Ingredients

2 tbsp Healthy U Mexico Spice

Alternative to Healthy U Mexico Spice

1 tsp cumin

1 tsp coriander

1 tsp turmeric

1/2 tsp garlic powder

1/2 tsp oregano

½ tsp salt

1 ½ tbsp oil

2 chicken breast, chopped

3 garlic cloves, minced

½ medium yellow onion, diced

1 red / yellow bell pepper, chopped

2 medium zucchinis, sliced and quartered

1 can chickpeas, rinsed and drained

3/4 cup shredded cheddar cheese

1/2 cup cilantro, chopped



Instructions
  1. In an oiled pan over medium heat, add chicken and Healthy U Mexico Spice. Sautee for 5-8 minutes, until the edges of the chicken are golden brown.

  2. Add yellow onions, garlic, yellow bell peppers, zucchini, and chickpeas. Sautee for an additional 5 minutes, until evenly coated

  3. Sprinkle in a handful of cheddar cheese and cilantro. Combine for 3-5 minutes then add additional cheese and cilantro on top and do not mix or combine. Leave until melted.
