Baked Shrimp Dumplings

Prep time: 10 minutes - Cooking time: 20-25 minutes Total time: 30-35 minutes

When I have savoury cravings, it’s usually for shrimp dumplings - and this is my EASY version! It’s basically 2-ingredients + marinade. I have fun folding while listening to my favourite playlist - you need this in your kitchen life too, trust me on this one!


Ingredients
  • 1 bag raw shrimp

  • Rice paper


Marinade:


  • 2 tbsp sesame oil


  • 1 tbsp soy sauce


  • 1 tbsp grated ginger


  • 1-2 garlic cloves, minced


  • Green onions, chopped


Creamy Sriracha Sauce:


  • 1/4 cup vegan mayo

  • 3 tbsp Sriracha chili sauce

  • 1 tbsp lemon juice

  • 1 garlic clove, finely minced

  • Salt to taste


Directions
  1. Combine marinade ingredients and pour over top of shrimp. Set aside.

  2. Add 1 rice paper at a time to warm water for 10 seconds. Place on paper towel.

  3. Add 2 tbsp shrimp and fold into a square.

  4. Bake on a parchment lined baking sheet at 400F for 20-25 minutes.

  5. Meanwhile, prepare the creamy sriracha sauce by combing above ingredients. Drizzle on top of baked dumplings. Enjoy!
