3 red bell peppers, halved
1 pkg frozen cauliflower rice
1 1/2 cups shredded cheese
1 can chickpeas, rinsed & drained
1-2 tbsp Healthy U Mexico Spice
Alternative to Healthy U Mexico Spice
1 tsp garlic powder
1⁄2 tsp crushed red pepper flakes
1⁄2 tsp dried oregano
2 tsp paprika
1 tsp ground cumin
1⁄2 tsp salt & black pepper
1⁄2 ground cinnamon
1⁄2 ground cloves
Oil & salt for cooking
Slice the peppers in half and remove seeds. Drizzle olive oil, salt, and Mexican spice over each pepper half.
In a bowl add cauliflower rice, chickpeas, cheese, and Mexican Spice.
Scoop into the pepper halves. Put the remaining mixture into the sides of the baking dish.
Sprinkle on some extra cheese and bake at 425F for 35-45 minutes.
