Chicken Chickpea Tikka Masala

Ingredients:

3 chicken breasts, chopped

2-3 tbsp of oil

1 cup of dried chickpeas

2 red onions, diced

3 garlic cloves, chopped

2 tbsp of finger, chopped

1 zucchini, chopped

28 ounce, canned crushed tomatoes

1 cup of Coconut milk or Almond milk

1 lemon, juiced

½ tsp of Salt

2 tbsp of Healthy U India spice

Alternative to Healthy U India Spice

2 tsp ground coriander

1 tbsp ground cumin

1 tbsp garam masala

2 tsp ground turmeric

2 tsp dry ground mustard

2 tsp salt & black pepper


Instructions:
  1. In One pot, add chicken, oil, chickpeas, onions, zucchini, tomatoes, milk, spice and lemon

  2. Cook for 4-6 hours on low-medium heat
