Creamy Asparagus Soup

Prep time: 15 minutes - Cook time: 30 minutes - Total time: 45 minutes


2 lbs asparagus, tough ends trimmed

2 tbsp oil

4 garlic cloves, minced

1 yellow onion, chopped

1 tsp sea salt or more to taste

1/4 tsp ground black pepper

900ml vegetable broth

1 cup milk

1 cup shredded mozzarella cheese OR juice of 1/2 lemon

Optional: shredded rotisserie chicken

  1. Heat a pan over med-high heat and add oil and garlic.

  2. Chop asparagus and onion, and add to the pot.

  3. Cook veggies until soft and add salt, pepper, broth, and milk.

  4. Use a hand blender to blend the mixture until smooth.

  5. Add shredded chicken and cheese.
