Prep time: 15 minutes - Cook time: 10 - 12 minutes - Total time: 25 minutes
2 cups almond flour
1/2 tsp baking soda
1/4 cup maple syrup
1 tbsp Healthy U Vanilla Pumpkin Spice or use 1 tbsp of this spice alternative:
1 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp allspice
A pinch of salt
2 tbsp coconut oil
3 tbsp molasses
1 large egg
1 tsp vanilla extract
Preheat oven to 350 degrees F.
In a large bowl, combine all ingredients into a doughy consistency.
Shape dough into bite-sized balls (approximately 11 balls).
Place balls on a baking tray lined with parchment paper.
Bake for 10 to 12 minutes.
Cool on a wire rack or a baking rack.
Sprinkle cookies with some rainbow sprinkles to finish!
