Festive Ginger Snaps

Ingredients

2 cups almond flour

1/2 tsp baking soda

1/4 cup maple syrup

1 tbsp Healthy U Vanilla Pumpkin Spice or use 1 tbsp of this spice alternative:

  • 1 tsp cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp allspice

A pinch of salt

2 tbsp coconut oil

3 tbsp molasses

1 large egg

1 tsp vanilla extract

Rainbow sprinkles





Directions
  1. Preheat oven to 350 degrees F.

  2. In a large bowl, combine all ingredients into a doughy consistency.

  3. Shape dough into bite-sized balls (approximately 11 balls).

  4. Place balls on a baking tray lined with parchment paper.

  5. Bake for 10 to 12 minutes.

  6. Cool on a wire rack or a baking rack.

  7. Sprinkle cookies with some rainbow sprinkles to finish!
