Ingredients
1 cup natural peanut butter, well stirred
¼ cup pure maple syrup
6 tbsp coconut flour
¼ cup mini white chocolate chips
½ cup crushed freeze-dried strawberries
Pinch of salt
Extra freeze-dried strawberries and white chocolate chips for topping, optional
Instructions
Stir the natural peanut butter well so the oils are fully incorporated and the peanut butter is smooth and creamy.
Add the peanut butter and maple syrup to a bowl and mix until combined.
Stir in the coconut flour and salt. The mixture should become thick, soft, and easy to press together.
Gently fold in the mini white chocolate chips and crushed freeze-dried strawberries.
Transfer the mixture to a small parchment-lined container and press it down firmly into an even layer.
Top with a few extra strawberry pieces and white chocolate chips, if desired.
Freeze for 20–30 minutes, or until firm enough to slice.
Cut into 24 bite-sized pieces. Store chilled for the best fudgy texture.
