Greek Feta Lemon Chicken Skillet

Prep time: 30 minutes - Cook time: 15 minutes - Total time: 45 minutes



Ingredients

Marinade:

  • 1-2 lemons juiced and zested

  • ½ cup extra virgin olive oil (or less if you prefer)

  • 3 garlic cloves finely minced, or 1 tsp dried garlic powder

  • 1-2 tsp dried oregano

  • 1 tsp smoked paprika

  • ½ tsp sea salt

  • ½ tsp coarse black pepper

  • 8-12 chicken thighs, or 3-4 chicken breasts, cubed

Garnish:

  • ¼ cup feta cheese

  • ¼ cup fresh chopped parsley or basil leaves

  • Additional wedges of lemon

Directions
  1. Combine all marinade ingredients and allow chicken to soak in it for at least 20 minutes.

  2. Pan-fry marinated chicken on an iron skillet.

  3. Garnish with feta, parsley/basil, and lemon.
