Prep time: 30 minutes - Cook time: 15 minutes - Total time: 45 minutes
1-2 lemons juiced and zested
½ cup extra virgin olive oil (or less if you prefer)
3 garlic cloves finely minced, or 1 tsp dried garlic powder
1-2 tsp dried oregano
1 tsp smoked paprika
½ tsp sea salt
½ tsp coarse black pepper
8-12 chicken thighs, or 3-4 chicken breasts, cubed
¼ cup feta cheese
¼ cup fresh chopped parsley or basil leaves
Additional wedges of lemon
Combine all marinade ingredients and allow chicken to soak in it for at least 20 minutes.
Pan-fry marinated chicken on an iron skillet.
Garnish with feta, parsley/basil, and lemon.
