One-Pan Shawarma Chicken Skewer Bake

Menu-fatigue solved. Big flavour. Perfect portions.

This easy, one-pan dinner is a must-make. Juicy shawarma-spiced chicken roasts over seasoned brown basmati rice so everything cooks together in one tray. Balanced, satisfying, and honestly 101/10 flavour.
Serves: 4
Ingredients
Chicken Skewers
4 boneless chicken thighs or breasts, cut into chunks
3 tbsp olive oil
2 tbsp shawarma seasoning
1½ tsp salt
1 tsp black pepper
1–2 tsp sumac (optional but highly recommended)
Shawarma Rice
2 cups brown basmati rice, washed & drained
1 large onion, chopped or sliced
1 bell pepper, chopped
2 zucchinis, chopped
¼ cup oil
2 tbsp shawarma seasoning
2 tsp salt
1 tsp black pepper
3 cups water
Instructions
Marinate the chicken: Toss chicken with olive oil, shawarma seasoning, salt, pepper, and sumac.
Build the rice layer: In a 9×13-inch baking dish, combine rice, onion, bell pepper, zucchini, oil, shawarma seasoning, salt, pepper, and water. Mix well.
Assemble the skewers: Thread chicken onto 4–6 skewers (about 8–10 pieces each). Lay across the baking dish so the chicken sits above the rice.
Bake: Cover tightly with foil (two layers).Bake at 400°F (200°C) for 30 minutes.
Broil for colour: Remove foil and broil 8–10 minutes, until chicken is golden and cooked through.
ServeFluff the rice and serve with the skewers.

Delicious but took quite a bit longer to cook - the rice was still fairly hard after 30 minutes. Removed chicken, cooked rice/veg at 425 for another 20+ minutes then returned chicken for broil. Enjoyed! Thx
