Prep time: 20 minutes - Cook time: 25 minutes - Total time: 45 minutes
1 pkg extra lean ground chicken
1 red onion, diced
3 cloves garlic, minced
Healthy U Mexico Spice (blend of cumin, chili powder, paprika, oregano, cloves, coriander, cinnamon)
3 tbsp EVOO
2 bell peppers, diced
4 carrots, diced
1-2 eggplants, diced
1 can chickpeas
1-2 cans diced tomatoes
1/2-3/4 cup sharp cheddar cheese, grated
1/4 cup fresh cilantro, diced
3 cinnamon sticks
Over medium heat, saute 1 package of extra lean ground chicken, 2-3 tablespoons of Healthy U Mexico Spice (blend of cumin, chilli powder, paprika, oregano, cloves, coriander, cinnamon), garlic, red onion and olive oil.
While the chicken is cooking, dice your veggies and add them to the pot along with 1-2 cans of diced tomatoes, chickpeas and cilantro. Insert 3 cinnamon sticks and cook covered for 20-25 minutes.
After 20-25 minutes remove cinnamon sticks, add sharp cheddar cheese and add extra cilantro before serving. Enjoy!
