Zucchini Fries

Prep time: 5 minutes - Cook time: 40 minutes - Total time: 45 minutes

Spice up your menu with this easy, fibre loaded, veggie boosting side dish!

  • 4-5 zucchinis, cut into rectangular shapes

  • 3 tbsp EVOO

  • 3 tbsp coconut flour

  • 2 tbsp spices (I used a mixture of garlic salt, paprika, basil, lemon pepper)

  1. In a large bowl, combine all ingredients and toss with hands.

  2. Pour onto a parchment lined baking sheet in a single layer. Spray with oil and top with additional spices.

  3. Bake at 400F for 40 minutes (broil for the last 2-3)! Enjoy!
