Ingredients

  • 3 large carrots, finely grated (about 6 cups grated carrots)

  • 3 large eggs

  • 1½ cups shredded mozzarella cheese

  • Optional: garlic salt or mild seasoning (to taste)


Instructions

  1. Preheat oven to 375°F (190°C) and line a large baking sheet with parchment paper.

  2. Finely grate the carrots. Using a clean kitchen towel or paper towel, gently squeeze out excess moisture.

  3. In a large bowl, combine grated carrots, eggs, mozzarella cheese, and seasoning if using. Mix until well combined.

  4. Divide the mixture into 6 equal portions on the prepared baking sheet.

  5. Spread each portion into a thin, even circle approximately 7 inches in diameter, forming wrap-style shells.

  6. Bake for 25 minutes, or until the edges are lightly golden and the centres are set.

  7. Remove from the oven and allow to cool for several minutes — the wraps will firm up slightly as they cool, making them easier to handle.
