Zucchini Ravioli

Ingredients & Directions:

1 cup cherry tomatoes, halved

1/2 red onion, thinly slices

4 cloves garlic, chopped

2 tbsp extra virgin olive oil

2 tbsp balsamic vinegar

1/2 tbsp Healthy U Italian Spice

Alternative to Healthy U Italian Spice

2 tbsp dried basil

2 tbsp dried oregano

1 tbsp dried rosemary

2 tbsp dried parsley

1 tbsp dried thyme

1 tbsp red chili flakes

1 tsp garlic powder

Salt/pepper

  1. Add all above ingredients into a bake dish and bake at 425 F for 10-15 minutes

3-4 medium zucchini, thinly sliced

  1. Lay out on a baking sheet and bake at 425 F for 10 minutes. Remove from oven and cool

1/2 lb ground beef, cooked!

3/4 cup ricotta cheese

1/2 cup shredded cheese or parmesan

1/4 cup fresh basil, chopped

1/2 tbsp Healthy U Italian Spice

Alternative to Healthy U Italian Spice

2 tbsp dried basil

2 tbsp dried oregano

1 tbsp dried rosemary

2 tbsp dried parsley

1 tbsp dried thyme

1 tbsp red chili flakes

1 tsp garlic powder

Salt/pepper

  1. Add all above ingredients into a bowl.

  2. Lay out 4 pieces of Zucchini, overlapping each other in a crisscross position and add a small spoon of ricotta mix in the middle.

Fold into ravioli and bake at 425 F for 10 minutes.
