10-Minute Red Curry Noodles

Prep time: 5 minutes - Cook time: 5 minutes - Total time: 10 minutes

  • 1/4 cup sesame oil

  • 1/2 cup green onions, thinly sliced

  • 3 tbsp Thai red curry paste (or add spice to taste)

  • 3-4 cloves garlic, finely chopped

  • 2 tbsp ginger, finely chopped

  • 1/2 cup fresh basil, chopped

  • 1/2 cup fresh cilantro, chopped

  • 3 tbsp light soy sauce

  • 3-4 bags of Konjac / Shirataki noodles, rinsed and drained (anything goes! You can also use brown rice ramen noodles)

  1. In a pan on medium heat, cook green onions and sesame oil until well combined.

  2. Add red curry paste, ginger, and garlic. Continue to cook until well combined.

  3. Remove mixture from heat and add to a bowl with basil and cilantro.

  4. Depending on the noodles being used, follow cooking instructions on package.

  5. Add sauce to noodles and finish with soy sauce.
