Carrot and Rutabaga Fries

Veggie Boost? Roasted Carrot and Rutabaga Fries are 🔥! We need at least 6-10 cups of veggies and fruit everyday, so why not make them taste delicious?



Ingredients

  • 6-8 carrots

  • 1-2 rutabaga

  • 6 garlic cloves, peeled

  • 1/2 tsp salt, pepper

  • 1/2 tsp garlic powder

  • 2 tbsp olive oil


Greek Yogurt Dipping Sauce:

  • 1/2 cup of plain greek yogurt

  • 1 garlic clove, minced

  • 1 tbsp lemon juice

  • 1/2 tsp salt

  • 1/2 tsp 


Directions
  1. Cut carrots and rutabaga into fry shape. Soak in cold water.

  2. Drain carrot/rutabaga and toss with remaining ingredients. Spread evenly on a parchment lined baking sheet.

  3. Bake at 425 F for 45 minutes or until cooked through.

  4. Meanwhile, combine yogurt dipping sauce. Set aside in fridge until ready to serve. Enjoy!
