Buffalo Zucchini Chicken Burgers

Prep time: 15 minutes - Cook time: 45 minutes - Total time: 60 minutes


1lb ground chicken

1 cup grated zucchini, squeezed excess moisture with a paper towel

2 tbsp coconut flour

2 tbsp buffalo sauce

1 tbsp soy sauce

1 onion, diced

½ tsp garlic powder

1/2 tsp cumin

1/2 tsp salt

Freshly ground black pepper

  1. Shred zucchini, squeeze excess moisture in a paper towel

  2. Combine all ingredients

  3. Form patties and place them in between 2 sheets of parchment paper and continue layering patties

  4. Place patties in the freezer until they are ready for you to enjoy! (Bake at 425F x 45 min)
