Cabbage Noodles

Prep time: 2 minutes - Cooking time: 5-8 minutes Total time: 7-10 minutes

These noodles are not only high fibre and low carb, but they count towards a veggie serving (or more)! You are going to have to trust me on this one, give this recipe a try. The perfect noodle swap, or simply a veggie side dish


  • 1 cabbage, thinly sliced

  • 1-2 tbsp black pepper

  • 2 tbsp EVOO

  • 1 tsp salt

  • Juice from 1 lemon

  • ¾ cup parmesan cheese

  1. Toast 1 tbsp black pepper on medium heat for 1 minute.

  2. Add olive oil to pan. Once heated add cabbage, lemon juice, remaining pepper.

  3. Cook for 5-7 minutes tossing with 1/2 cup parmesan cheese. Serve with remaining parmesan on top. Enjoy!
