Prep time: 20 minutes - Cook time: 35 minutes - Total time: 55 minutes
3-4 chicken breasts, butterflied
2 tbsp olive oil
¼ cup Healthy U Italian seasoning (divided between cauliflower and chicken)
1 head of cauliflower, cut into steaks (optional - bake at 425F x 10 minutes before adding other layers)
¾ cup marinara sauce
1 cup mozzarella cheese, sliced
½ cup parmesan cheese, grated (save some for topping)
2 tbsp thinly sliced basil, topping
Slice cauliflower into “steaks”. Place in a lined baking dish and coat with olive oil and half of the Healthy U Italian seasoning.
Add a layer of marinara sauce to the cauliflower steaks.
Place butterflied chicken breasts on top of the cauliflower and coat with the remainder of the Healthy U Italian seasoning.
Place a final layer of sliced mozzarella cheese and parmesan cheese.
Bake at 425F for 25-35 minutes
Top with fresh basil and enjoy!
