Cheesy Tofu Wrap

Tofu is a budget-friendly, protein-packed powerhouse 🥢 that supports heart health ❤️, eases menopause symptoms 🌸, strengthens bones 🦴, and helps keep muscles strong 💪— all while being plant-based! 🌱

Ingredients
  • 1 brick extra firm tofu, grated

  • 1/2 - 3/4 cup grated cheese of your choice

  • 1 tbsp extra virgin olive oil

  • 1/2 tsp each smoked paprika, garlic powder, salt



Directions
  1. Preheat oven to 400F.

  2. Using a grater, grate the tofu block into shreds. Line a baking sheet with parchment paper and spread the grated tofu.

  3. Drizzle olive oil and seasoning onto the tofu. Mix until combined.

  4. Sprinkle cheese on top of the tofu, evenly.

  5. Bake for 30 minutes until golden and crispy on the edges. Cut into rectangles.

  6. Add your favourite wrap toppings (mine are lettuce, peppers, tomatoes, hot sauce and an egg.
