Chopped Thai Salad

1 Napa cabbage, finely chopped

1/2 red cabbage, finely chopped

3 carrots, grated

2 red bell peppers

1 bunch green onions, chopped

1 cup cilantro

1 tbsp mint, roughly chopped

1 cup cashews or peanuts, chopped (including for garnish)

Garnish peanuts/cashews


1/3 cup peanut butter

2 tbsp soy sauce

3 tbsp sesame oil

1/4 cup rice wine vinegar

2 limes juiced

2 tbsp chili garlic

1 1/2 tbsp honey

1 large knob ginger, grated

2 large cloves garlic, grated

  1. Combine salad ingredients and dressing ingredients separately. Coat salad in dressing and mix well.
