Edible Cookie Dough & Creamy Brownies

Prep time: 20 minutes - Cook time: 24-32 minutes - Total time: 44-52 minutes

Ingredients

Edible Cookie Dough (makes 18 portions, 10g protein per serving)

  • Cottage cheese blend: 1 pkg cottage cheese (500g), ¼ cup maple syrup, 2 tsp vanilla extract

  • 2 cups almond flour

  • ½ cup protein powder (if you skip this ingredient, use ½ cup less of cottage cheese blend)

  • 1 cup chocolate chips, minis


Creamy Brownies (makes 16 brownies, 8g protein per brownie)

  • Cottage cheese blend: 1 pkg cottage cheese (500g), ¼ cup maple syrup, 2 tsp vanilla extract

  • 2 cups almond flour

  • ½ cup cocoa powder

  • 1 egg

  • 1 tsp baking powder

  • 1 cup chocolate chips (white & semi-sweet mixed together, save some for topping)


Directions
  1. In a blender, blend 2 packages of cottage cheese, ½ cup maple syrup, and 4 tsp vanilla extract. Divide mixture evenly into two bowls.

  2. To one bowl, add 2 cups almond flour, ½ cup protein powder, and 1 cup mini chocolate chips. This ready-to-eat cookie dough can be stored in the fridge.

  3. To the second bowl, add 2 cups almond flour, ½ cup cocoa powder, 1 egg, 1 tsp baking powder, and 1 cup chocolate chips. Add this brownie mixture to a lined baking dish. Baked at 350F for 24-32 mins.
