Eggplant Lasagna

Prep time: 20 minutes - Cook time: 60 minutes - Total time: 1 hour and 20 minutes

Servings: 6-8


Meat sauce:

1lbs @trulocal lean ground beef

1 garlic clove, minced

1/4 tsp salt & pepper

2 cups marinara (or 2 cups pureed tomato + 1 tbsp Healthy U Italian Spice)

Alternative to Healthy U Italian Spice:

2 tbsp dried basil

2 tbsp dried oregano

1 tbsp dried rosemary

2 tbsp dried parsley

1 tbsp dried thyme

1 tbsp red chili flakes

1 tsp garlic powder

1 tsp salt & black pepper

Ricotta mixture:

1 pkg ricotta mixture

1/2 cup parmesan cheese, grated

1 egg

1 tbsp Healthy U Italian Spice

1/4 cup fresh basil, chopped

2 cups of light mozzarella cheese, shredded

  1. Prepare the eggplant first by slicing (with skin) and roast at 400F for 15 minutes, until soft. Sprinkle with olive oil & salt

  2. Prepare your meat sauce, by adding all the above ingredients into a pot over medium-high heat for 8-10 minutes.

  3. In a bowl, mix together all the ricotta ingredients and mix until smooth

  4. Begin layer: 2 scoops of ricotta mix at the bottom of a oven safe dish, layer with eggplant slices and lastly add the meat sauce. Continue layering until all the ingredients are used up

  5. Lastly, sprinkle with mozzarella cheese.

  6. Bake at 400 F for 25-35 minutes
