A creamy treat combining Greek yogurt, natural peanut butter, and melted chocolate for a rich, protein-packed dessert or snack.
Prep time: 10 minutes Total time: 1 hour and 45 minutes (includes chilling time)
Serves: 6 servings
Ingredients
1 ½ cups Greek yogurt (I used vanilla, but you can use plain without or without sweetener)
¾ cup natural peanut butter (you can use PB powder for less calories)
1 cup melted chocolate (you can use ½ tsp coconut oil for melting, or double-boiled)
Directions
In a medium bowl, combine 1 ½ cups of Greek yogurt and ¾ cup of natural peanut butter. Stir until the mixture is smooth and well combined.
Scoop the mixture and place it on a parchment-lined baking sheet, shaping it into your desired size and shape. Place the baking sheet in the freezer for 1 hour, or until the yogurt and peanut butter shapes are firm.
Melt 1 cup of chocolate chips using a double boiler or by microwaving in 30-second intervals, stirring in between until fully melted. You can add ½ teaspoon of coconut oil to help with melting if desired.
Remove the frozen shapes from the freezer and dip each one into the melted chocolate to coat completely. Place them back onto the lined baking sheet.
Return the baking sheet to the refrigerator for about 30 minutes or until the chocolate is set and firm.
Enjoy the treats chilled. Store any leftovers in the freezer.
