Kimchi Fried Cauli-Rice

1 pkg cauliflower rice

1 pkg firm tofu, cubed

1 cup kimchi

3 tbsp soy sauce

1 tbsp sesame oil

2 tbsp oil

2 cloves garlic, minced

2 tsp freshly grated ginger

1 pkg mushrooms, sliced

1 red pepper, thinly sliced

1/4 cup green onions, diced

3-4 fried eggs

1/4 cup seaweed strips

  1. Over medium heat, in a frying pan add garlic, ginger, tofu, soy sauce, sesame oil, peppers, mushrooms, kimchi, green onions, and cauliflower rice, Mix for 5-8 minutes until cooked and evenly mixed.

  2. Crack 3-4 eggs inside the mixture and cover with a lid for another 3-4 minutes.

  3. Remove from heat and slice up the seaweed strips on top.
