Prep time: 15 minutes - Cook time: 25 minutes - Total time: 40 minutes
5-6 chicken breasts (sliced thinly in half)
5-6 cups mixed nuts (walnuts/ almonds/pecans)
1 tbsp oregano
1/4 tsp paprika
2 tsp salt
3 egg whites
Preheat oven to 425F.
Pulse all nuts together until they resemble breadcrumbs.
Mix in salt, paprika and oregano.
Dip chicken into egg whites then press into breadcrumbs mixture.
Put on a parchment lined baking sheet and bake for 15 minutes.
Flip, drizzle with olive oil and bake for another 10 minutes.
Top with a squeeze of lemon and kosher salt.
