One Pan Chicken and Squash

Prep time: 5 minutes - Cook time: 60 minutes - Total time: 65 minutes

One pan and full of flavour! This delicious dinner comes out juicy with a crispy top finish to please even the toughest crowd!

  • 4-6 chicken thighs

  • 1 butternut squash, cubed

  • Feta cheese

  • Cilantro

  • ¼ cup olive oil

  • ¼ cup lemon juice

  • 3 garlic cloves, pressed

  • 1 tsp salt

  • 1 tsp paprika

  • 1 tsp 7 spice blend

  1. Place chicken thighs in a baking dish and top with squash.

  2. In a bowl mix together marinade ingredients and pour over top of chicken/squash.

  3. Bake at 400F for 60 minutes or until chicken cooked through. Crumble feta on top and sprinkle with cilantro. Enjoy!
