Parchment Paper Salmon

Prep time: 20 minutes - Cook time: 10-15 minutes - Total time: 30-35 minutes


Ingredients
  • 3-4 salmon filets

  • 1 white onion, thinly sliced

  • 3 garlic cloves, finely diced

  • ½ cup fresh herbs (e.g. parsley, dill, cilantro)

  • 1/2 tsp salt / pepper

  • 2-3 tbsp EVOO

  • 1 cup vegetable broth

  • 2-3 lemons, sliced + 1-2 wedges for topping

Directions
  1. Place a sheet of parchment paper in a frying pan.

  2. To the pan, add half the onion slices and the salmon fillets.

  3. Top your fillets with diced garlic, herbs, salt/pepper, EVOO, vegetable broth, the remaining onion slices, and lemon slices.

  4. Cover the pan with another layer of parchment paper and cover with a lid.

  5. Cook on medium-high for 10-15 minutes. Top with more fresh lemon juice and enjoy!
