Protein Loaded Artichoke Dip

Prep time: 10 minutes - Cook time: 25 minutes - Total time: 35 minutes


1 1/2 cups plain Greek yogurt (+ 2 garlic cloves, minced and 1/2 tsp salt)

1 cup frozen spinach, flakes or cubes

1 cup artichokes, chopped into small cubes

1 cup freshly grated parmesan cheese

  1. Mix all ingredients evenly in 1 bowl and transfer to a baking tray

  2. Optionally, you can add a small block of parmesan cheese before your bake for extra flavour!

  3. Bake at 425F x 20-25 minutes (until sizzling)

  4. Enjoy with a whole-grain rice cracker or baguette slices!
