1 Keto Tortilla
1/2 cup Roasted cherry tomatoes
3/4 cup light ricotta
3-4 basil leaves
2 garlic cloves
2 tbsp olive oil
1 tsp salt
In a bowl, prep the whipped ricotta by by mixing together the light ricotta, basil, minced garlic, olive oils and salt
Spread olive oil on the keto tortilla and toast on both sides in a frying pan on medium. Add salt to taste and cook until warm and golden.
Remove tortilla from pan onto a plate
Add whipped ricotta, roasted cherry tomatoes, and garnish with a drizzle of balsamic vinegar and chopped basil.
