Ingredients List:
2 cups butternut squash, diced (fresh or frozen)
1 onion, sliced
1 package of Turkey kielbasa, sliced
2 tbsp oil
2 tbsp Healthy U Onion Overload
Alternative to Healthy U Onion Overload
2 tsp minced onion
2 tsp granulated onion
2 tsp onion powder
1 tsp salt
1 tsp chives
2 cups cauliflower rice (fresh or frozen)
6 eggs
Instructions:
Add squash, onion and turkey kielbasa to a parchment paper-lined baking sheet
Season and bake at 425F for 30 minutes
Remove from oven and add a layer of cauliflower rice
Use a spoon to create pockets to add eggs
Bake again at 425F for 10-15 minutes
