Sheet Pan Egg Hashbrowns

Prep Time: 20 min - Cook Time: 45 min - Total Time: 1 hour 5 min

Ingredients List:
  • 2 cups butternut squash, diced (fresh or frozen)

  • 1 onion, sliced

  • 1 package of Turkey kielbasa, sliced

  • 2 tbsp oil

  • 2 tbsp Healthy U Onion Overload

Alternative to Healthy U Onion Overload

2 tsp minced onion

2 tsp granulated onion

2 tsp onion powder

1 tsp salt

1 tsp chives

  • 2 cups cauliflower rice (fresh or frozen)

  • 6 eggs


Instructions:
  1. Add squash, onion and turkey kielbasa to a parchment paper-lined baking sheet

  2. Season and bake at 425F for 30 minutes

  3. Remove from oven and add a layer of cauliflower rice

  4. Use a spoon to create pockets to add eggs

  5. Bake again at 425F for 10-15 minutes
