Spaghetti Squash Rings

Prep time: 5 minutes - Cooking time: 50 minutes Total time: 55 minutes

This dreamy recipe is officially the easiest way to cook spaghetti squash. It’s also the best meal prep recipe for the week ahead


Ingredients

Spaghetti Squash

  • Spaghetti squash, sliced

  • 1 tbsp EVOO

  • 1 tsp oregano and sea salt

Toppings

  • 500g extra lean ground chicken

  • 2 cups marinara sauce

  • 1 cup ricotta cheese

  • 3 tbsp basil blend mixture (or fresh works too!)

  • ¼ cup freshly grated parmesan cheese


Directions
  1. Microwave speghetti squash for 3 minutes and then cut into rings.

  2. On a parchment lined baking place rings and drizzle with olive oil and sprinkle with seasoning.

  3. Bake at 400F for 25 minutes.

  4. Remove from the oven and layer toppings into each ring. Return to oven and bake for an additional 25 minutes. Enjoy!
