Speedy Pickled Red Onions

1 red onion, peeled and cut into rounds.

1 garlic clove, diced

1 tbsp fresh dill

1 tsp maple syrup

1/2 tsp salt

3/4 cup vinegar

  1. Sterilize a glass jar in boiling hot water. To do this, bring water to a boil in a pot with enough water to completely cover a jar.

  2. Submerge an already washed and clean jar into the water and let it boil for at least 15 minutes.

  3. Turn off the heat and let the jar sit in the hot water until you are ready to fill it.

  4. You will need to fill the jar while it’s still hot. When you are ready, use a pair of canning tongs to remove the jar from the pot.

  5. Add in onions first. Then fill the jar with vinegar.

  6. Optional: add in garlic, dill, maple syrup and salt for some added flavour!
