Ingredients & instructions:
Wet ingredients:
8 dated, pitted
1 large banana, very ripe
1 tsp vanilla extract
¼ cup coconut oil
Preheat oven to 350ºF and line a baking sheet
Add dates to 1 cup of boiling water, soak for 5 minutes, then drain
In a blender, add dates, banana, vanilla extract and coconut oil. Blend until smooth.
Dry ingredients:
½ cup almond flour
2 tbsp tapioca flour
½ tsp baking soda
¼ cup chocolate chips, save some for drizzle
1 tbsp skor bits
1-2 tsp chia seeds
In a small bowl, combine almond flour, tapioca flour, baking soda, chia seeds and chocolate chips
Add wet ingredients to dry mixture. Fold together ingredients until combined.
Lay mixture onto baking sheet and flatten mixture until it is about ½ inch thick. Bake for 18-22 minutes
Let granola bars cool then cut into rectangular pieces
Melt leftover chocolate chips and drizzle over granola bars then top with skor bits
